Ham & Bean soup

* Hurst's 15 Bean Soup dry mix, 1 bag * Water, tap, 3 quarts * Picnic ham bone with some meat attached * Salt, 1.5 tsp * Pepper, black, .5 tsp * Onions, raw, 1 large * Chili powder, 1 tbsp * Canned Diced Tomatoes, 20 oz. * Garlic, minced 3 tsp * Lemon juice, 1 tbsp
Wash bean soup mix and place in dutch oven. Cover with water and soak overnight. Drain beans and add 3 qts. water, the pork bone, salt and pepper. Cover and bring to a boil. Reduce heat and simmer 1 1/2 hours.
Remove bone from soup and remove meat from bone (omitting fat). Chop meat and return it to the soup. Add the remaining ingredients and simmer 30 minutes, stirring occasionally.
Makes 16 servings.
