Chicken Vegetable Fried Rice

Ingredients
2 C brown rice, cooked (frozen precooked is good)1 egg2 tsp. olive oil10 oz. frozen mixed vegetables1/2 onion, chopped1/2 chicken breast, boneless, sliced (tofu or turkey sausage is an option)3 tsp. soy sauce
Directions
1. Slice chicken (raw) into small (1 inch) strips. Season with salt.
2. Heat 1 tsp. oil in pan; saute onion and sear chicken.
3. Add cooked rice.
4. Heat rice and chicken through; prepare a well in the middle of the pan.
5. Add frozen veggies to well. Heat through (5 minutes).
6. Again, prepare a well; add second tsp. oil and fry scrambled egg in middle. Combine all ingredients.
7. Add 2-3 tsp. soy sauce to mixture and serve.
