Simmered Chinese Chicken

1 whole chicken1 Tbsp oil1/3 cup soy sauce1/3 cup brown sugar1/2 cup water1 clove garlic1 Tbsp ketchup1 green onion, sliced1/4 cup dry sherry or apple juice or a splash of red wine vinegar1/2 tsp crushed red pepper flakes2 Tbsp. corn starch2 Tbsp water
1. Rinse chicken and pat dry. Heat oil in dutch oven and brown chicken on all sides.
2. Mix together soy sauce, brown sugar, water, ketchup, sherry, red pepper, garlic, and green onion. Pour mixture over chicken. cover and simmer 30-40 minutes.
3. Turn chicken once during cooking. Remove chicken to platter. Skim fat from sauce.
4. Blend together cornstarch and water and whisk into sauce. Cook, stirring constantly, until thickened. Serve sauce with chicken. If desired may sprinkle cooked chicken with 2 tsp toasted sesame seeds.
