Ricotta Pancakes

Ingredients
3 medium egg whites1 tsp baking powder1 dash salt6 cups skim milk5 cups white flour1 cup ricota cheese
Directions
1. Separate eggs, discard yolks and beat whites until stiff.
2. In another bowl, mix other ingredients well.
3. Fold in egg whites.
4. Cook on hot griddle (medium-low heat) turning when bubbles cover the top.
5. Serve hot.
