Chipotle Black bean and Sweet Potato Burritos

-1.5 cups sweet potatoes, cubed-1 tsp olive oil-salt to taste -2 chopped chipotle peppers with 2 tsp of adobo sauce seperated in half-one small onion (.75 cup)-small can chopped green chilies-1 can or 2 cups black beans-4 10" flour tortillas
makes 4 burritos
Preheat oven or grill to 400 degrees. Mix sweet potatoes with oil, salt, and half of the chipotle. Wrap in foil and bake/grill for approximately 20 mins or until potatoes are done.
While those are baking, cook onion in a pan or pot sprayed with cooking spray. Add green chilles and the rest of the chipotle once the onions look translucent. Add the black beans and cook on low until the potatoes are done.
Add .25 or each mixture to four tortillas and enjoy!
(you may add light mexican cheese, rice, guacamole, or other ingredients if so desired.)
