Spaghetti Squash and Shrimp Stir Fry

1 - 3 lb Spaghetti squash1 - 680 gram bag of pre cooked, de-veined and peeled shrimp2 tbsp sesame oil1 cup mixed greens1 tbsp reduced sodium soy sauce2 tbsp red wine vinegar (or balsamic)1 tsp Asian red chili paste
1. Cook squash
2. Place oil in pan and cook shrimp until done.
3. Add squash and cook for one minute. Add greens and cook for one minute.
4. Add soy sauce, wine vinegar and chili paste and cook, stirring constantly, for another 30 seconds.
Makes 4 1 cup servings.
