Ingredients
2 stalks lemon grass6 cups of water1 -2 tablespoons maple syrup, honey, or agavefresh mint or cinnamon also make great additions
Directions
Remove dried out layer of lemon grass, Cut stalks into 4 inch pieces.
Bruise by pounding with a glass and twisting. (this release a lot of the essential oils and gives more flavor.)

Simmer in water for 20 - 30 min on Med-Low heat.
For an extra punch cinnamon or mint can be added at this point as well.

Add 1 - 2 tbsp of sweetener once infused and strain stalks from tea.

My favorite in the summer is to serve cold with mint and an orange slice.
Or in the winter serve hot with a touch of cinnamon and maple. Its especially good when I have a cold!

I like your take on the tea with the mint, I make a much larger batch, 18 cups and use about 8 stalks. Save the bruising by slicing in half the stalk pieces and I cook for an hour on low boil. I strain and enjoy the hot lemon grass brew with a two packets of splenda for a 1 and 3/4 cup mug. - 1/30/12
