Banana bread

Ingredients
5 ripe bananas1 c sugar1 tsp vanilla2 cups flour (1 white, 1 whole wheat)1 tsp baking powder1/2 tsp baking soda1 tsp cinnamon1/4 c water1 tbsp Earth Balance buttery spread1 cup pecans (or nuts of your choice or optional)
Directions
Mash bananas with sugar and vanilla, then mix in water. Stir in dry ingredients, then nuts. Oil bread pan with Earth Balance spread and spread batter smoothly around pan.

Bake at 350 degrees for 50 - 60 minutes.

You can substitute 1 1/2 c of unsweetened applesauce in place of three of the bananas for lower calories. Also, 1/2 cup of Stevia and 1/2 cup brown sugar instead of 1 c white sugar cuts down on even more calories.
