Sweet potato & Black bean Chili

Ingredients
3 lge. sweet potatoes, peeled and cut in 1/2" cubes1 large onion, chopped1 T. extra virgin olive oil2 T. chili powder3 garlic cloves, minced1 t. ground cumin1/4 t. cayenne pepper2 cans (15 oz. ea.) black beans, rinsed and drained1 can (28 oz.) diced tomatoes, undrained1/4 c. brewed coffee2 T. honey1/2 t. salt1/4 t. pepper1/2 c. shredded reduced fat Monterey Jack (Opt.-not in stats.)
Directions
In nonstick Dutch oven coated with cooking spray, saute sweet potatoes and onion in olive oil until crisp tender. Add the chili powder, garlic, cumin, and cayenne; cook 1 minute longer. Sitr in the beans, tomatoes, coffee, honey, salt, and pepper. Bring to a boil. Reduce heat; cover and simmer for 30-35 minutes or until potatoes are tender.

Optional: Sprinkle with cheese before serving.

Each serving approx. 1 cup.
