Fat Free Awesome French Onion Soup

6 c. mixed chopped onions4 c. Progresso 100% Natural Beef Broth5 sprays fat free butter spray1/4 c. dehydrated onion1/4 c. white wine (may omit or substitute broth)6 cloves sliced garlic1 sprig fresh thyme1/2 t fresh ground white pepper1 T. fresh parsley, finely chopped1 T. fresh chives (dried will work, just use less)1 1/2 c. Kraft Fat Free Mozzerella Cheese2 Knoor onion boullion cubes (optional)
"Saute" or sweat your onions in 1/4 c. of the beef broth, just until they begin to turn translucent.
You can GO CRAZY with your onions--go through the fridge, the market, get whatever kind of onions you can lay your hands on, the more variety, the better the soup!
Add 5 sprays of non fat butter spray, for just for a little extra flavor.
Add the remaining broth, the dehydrated onion (if you don't have it don't sweat it, it will still be good), the white wine and the sliced garlic cloves (you can use the peeled ready to go ones from the Club Store as I do). Add the thyme (I always have it growing on my windowsill, but you can use dry, just don't overdo it). the pepper, and PUT A LID ON IT--we don't want the liquid to evaporate and just want the flavors to marry ;) Simmer for approximately 15 minutes, or until all onions appear clear. Turn the heat off, add the parsley and chives, put the lid back on and let it get happy for 5 minutes.
(Now this is where I just had to do something--I've given up fat...... I've given up cholesterol...I just can't give up everything!...though it is really good without, I just happened to have some Knoor Onion Boullion cubes, and I added 2 here. I could not find them on the calorie calculator, but they only add 10 calories each, and some sodium, but no fat. They are optional. I promise, it will still be good if you don't have/add them).
In the meantime, you can prepare your bowls. You have 2 options-cheese on the top or on the bottom. Because we are making a fat free soup, we have eliminated the bread (honestly I don't miss it)...so you may put 1/4 c of cheese in the bottom of the bowl, or you can put it on top of the soup and place under the broiler--though I must warn you it will not turn out as beautifully as traditional French Onion Soup (the FATTENING kind!).
Now serve! I hope you like it as much as my family does and I thank you for looking at my recipe.
