Lap-Band Friendly: Wilted Spinach with Blue Cheese, Bacon and Onion

Ingredients
2 tsp Extra Virgin Olive Oil1/2 cup thinly sliced purple onion (I use a mandolin)2 cloves garlic chopped1 package of fresh spinach2 slices pre-cooked bacon1 Tablespoon crumbled blue cheese
Directions
heat oil in skillet and saute onions until the are soft and translucent (about 1 minute)
Add Garlic and saute for 30 seconds.
Add bag of spinach and saute until it wilts (about 2 minutes)
divide onto two plates and sprinkle with crumbled bacon and Feta.
Serve Warm.
