Breakfast Cheese Casserole

Ingredients
6 large eggs6 slices day-old bread (cubed)8 oz. reduced-fat (2%) Cheddar Cheese1 3/4 c. 1% Milk (divided)3/4 tsp each, kosher salt, black pepper and paprika1/2 tsp ground mustard powderCooking spray
Directions
Spray casserole dish. Add bread and cheese in layers until you are approx 1 inch from the rim of the dish. In a seperate bowl beat together 1 1/2 c of mil, eggs, salt, pepper, paprika and mustard. Pour the egg mixture over the bread and cheese. Add additional 1/4 c of milk (or more if needed) to bring the level of the liquid to the surface of the bread layers. Let stand for 3 hours and bake in a 350 degree oven for 1 hour. Let stand for 10-15 minutes before serving.
