Spinach Omelet

Ingredients
1/2 Tbsp. olive oil1/2 cup fresh baby spinich1 egg2 egg whites1 slice fat free cheese
Directions
Heat 1/2 Tbsp. olive oil in omelet pan. Saute spinach just until it is wilted. Whip the egg and egg whites together, and then pour over the wilted spinach. When set, place cheese slice on lower half of omelet, flip top half over and heat until cheese melts. Serves 1.
