Tofu Pad Thai

1/2 cup Splenda1/2 cup rice vinegar1/4 cup fish sauce1 Tbsp lime juice12 oz dried rice noodles2 tsp sesame oil2 eggs12 oz package firm tofu1/2 cup chopped peanuts1/2 cup green onion, chopped2 cups fresh bean sprouts
To prepare Pad Thai sauce: In a medium saucepan over medium heat, blend, splenda, vinegar, fish sauce, and lime juice.
To make Pad Thai: Boil rice noodles until slightly soft. Drain. In a large skillet over medium heat, warm sesame oil & a splash of soy sauce. Scramble eggs and garlic. Add tofu and stir until well mixed. Add noodles and stir.
Stir Pad Thai sauce. Add green onions and bean sprouts. Top with peanuts.
