Salmon Patties

Ingredients
1 14 oz can salmon, skin removed and flaked1/4 cup egg beaters or 1 beaten egg1/2 small onion, chopped2 tsp black pepper1 TB cornmeal1 TB olive oil for pan
Directions
Heat oil in a nonstick skillet

Mix all ingredients.

Drop into skillet

Cook until golden brown on each side.

I use a small ice cream scoop and make 8 patties, slightly mashing them with a spatula after a minute of cooking time then flip. Two patties is one serving.
