2 cups of Unle Ben's whole grain fast and natural instant brown rice (uncooked)1 Can of Bush's Reduced Sodium Black Beans (drained and rinsed)1 cup of canned Del Monte Whole Kernel Corn (no salt added)1 can of RO*TEL Original1 cup of CHI-CHI's Medium Thick & Chunky Salsa1 cup of Kroger Fat Free Sour Cream2 cups of Kroger Sharp Cheddar Cheese Shredded1 cup of chopped Green Onion
Cook rice as per the directions on the box (without the butter).
Combine all ingredients except 1 cup of cheese in a large mixing bowl. Spread into a 13x9 pan and bake at 350 degrees for 30 minutes. Sprinkle remaining cup of cheese on top and bake an additional 5 - 10 minutes.
