Shrimp Pasta Bake

1lb box of Penne pasta2 tsp dried basil leaves1 tsp dried oregano1 tsp olive oil1/2 cup of water1 1/2 lbs of medium shrimp (cleaned and peeled)1 can diced tomatoes1 can tomato sauce1 large onion chopped1 1/2 cups of mushroom slices/pieces2 cloves of minced garlic (more if desired)1 8oz bag of mozzeralla part skim cheese (shredded)Salt & pepper to taste
1. Boil pasta per box instructions drain and set aside.
2. Sautee onions, garlic and mushrooms in a dutch oven or large skillet with olive oil till softened.
3. Add tomato sauce, diced tomatoes, water, spices, shrimp and allow to simmer a 10 minutes or so heating thoroughly. Stir frequently. Salt and pepper to personal preference.
4. Coat a 13x9 casserole dish or aluminum pan with non-stick spray.
5. Add pasta to mixture, remove from heat and blend well.
6. Pour contents into the casserole dish. Spread out evenly and top with mozzeralla cheese.
7. Bake uncovered for 30 minutes or before top begins to brown.
Serves 10.
