Olive oilSmall onion Dicedtwo cloves of minced garliccup of quinoatwo cups of chicken broth1tbs of curry powder 1.5tsp chilli powder salt and pepper to taste
Heat oil in large skillet and add onion and garlic and cook for two minutes. Add quinoa and cook until lightly toasted (about 5 minutes). Poor broth into pan and bring to a boil and reduce heat, add curry and chilli powder then cover and simmer until tender.
