Black Bean and Pineapple Quesadillas

Ingredients
2 cans black beans, drained1/2 large onion2 cloves minced garlic3/4 cup kraft fat free shredded cheese1 cup pineapple tidbits3 large whole wheat tortillas1 small can diced green chile peppers1/2 can yellow corn (about 1 cup)crushed red pepper to taste1/2 packet taco seasoningA dash of lime juice
Directions
Preheat oven to 300 degrees F.

In a large saucepan, saute onion and diced green chiles until onions are translucent.

Drain black beans, add garlic, crushed pepper and lime to taste. Use a hand mixer or potato masher to smash beans. Add them to the saucepan with onions and mix well.

Add taco seasoning and corn. Once ingredients are mixed and heated, divide mixture among 3 large whole wheat tortillas on a baking sheet (either spray or use tinfoil). Only place the mixture on one side of the tortilla as they will be folded in half.

Add pineapple tidbits and 1/4 cup shredded cheese to each tortilla, close and smoosh down flat and even.

Bake for 10 minutes or until cheese is melted.

Presto - black beanie quesadeenie!

Makes 6 servings. Each serving is 1/2 of a large (170 calorie) whole wheat tortilla.
