2 lean trimmed chicken breasts1 tsp fresh ginger2 tsp fresh minced garlic1 12 oz bag fresh stir fry veggies (broccoli, snow peas, carrots, red cabbage1 cup frozen shelled edamame (soybeans)2 tbs stir fry saucewater2 tbs olive oil
heat olive in bottom of wok -
add ginger and garlic -
cut chicken into small pieces and add to hot oil. cook chicken until tender and brown -
add water to keep from burning -
add veggies and cook about 10 minutes -
move all mean and veggies to top of wok and add egg into the hot liquid in the bottom and cook about 3 min -
stir all ingredents together and eat over brown rice or as is.
