Crepes

Ingredients
1/3 Cup dry pancake mix1 egg1/3 cup soy milk1 tbsp melted butter or margarine
Directions
Mix ingredients together until smooth and let stand about 10-15 min.

Heat 8" frying pan to med heat and use a little margarine or butter to line the pan. I find if I do this once I don't have to do it again (unless I'm doubling the batch)

Pour about 3-4 tbsp of the mix into the pan and move the pan around so the liquid coats it. Flip after about 1 min and cook other side for about 30 sec. Roll up with your fav fruit inside and enjoy!

Makes about 4 crepes.
