peel and cut Egglant instrips Lightly salt. Let stand for 15 minutes. Rinse Eggplant spray with Gooking spray and sprinkle with garlic powder. Put in oven for 5-10 minutes on each side. Cook pasta according to package. Spray pan with cooking spray Layer the bottom with a 1/4 in layer of Sauce. Drain Pasta. Layer 1 cup pasta on the bottom of dish pressing it into the sauce. Sprinkle with 2 oz of chees and a couple of torn basil leaves. Place eggplant over the top of noodles. then Zucchini. Layer sauce over. Then sprinkle on Mushrooms. Toast Multigrain Bread. Spray one side with cooking spray Sprinkle more garlic powder on Bread...Layer the to with crushed mutigrain bread crumbs and the remainder of sauce and cheese. cook on 375 for about 20 minutes or until Cheese is starting to lightly brown on the top.
Makes a 9x13 shallow baking dish cut into 6 pieces
