Dell's Hopping John

Ingredients
Pam spray1 large chopped onion,1 1/2 cup chopped celery1 T minced garlic1 bay leaf crushed1/4 tsp thyme6 oz. keilbasa, chopped1 C white wine2 C water1C Basmati rice3c cooked black eyed peas
Directions
1. Spray pan in skillet and add onion, garlic and celery, & red pepper, Saute' until translucent.
2. Stir in black eyed peas and all liquid & spices and rice.
3. Simmer for 40 minutes and add more water as needed, stirring often.

Makes 8-1 1/2 Cup servings

    Really tasty, I added some raisins to the dish for variation on some days! Is the calorie serving size correct seems low in cals for the quantity given. I used the turkey Kabassa as well...not to much salt yet very tasty! - 1/10/13

    Wow, this is great! I used Turkey Polish Keilbasa to make it a little leaner, and used some Chamapgne from the memosas this morning. My fiance is of Polish decent, so he was happy. This tasted amazing. Thanks for sharing! - 1/1/13
