Chai Tea, Modified

Ingredients
2" ginger root, peeled & sliced thin1/4 oz cardamom seeds, crushed5 cinnamon sticks1 tsp whole cloves2 gallons tap water
Directions
Heat water to boiling & remove from heat. Add spices and allow to steep for 30 minutes. Filter tea into pitcher. Makes 64 4-oz cups.

    I actually boil this down a bit to condense it, and I use already seasoned whole leaf tea bags. I add honey to sweeten mine while it is hot. I can refrigerate this a long time as there is no milk product. - 1/23/09
