German Pancakes (Family Recipe)

Ingredients
2 cups flour2 cups milk6 eggs2 tablespoon (6 tsp) sugar2 tsp vanilla extractbutter, as needed (crisco if using iron skillet)
Directions
Put all ingredients in a large mixing bowl and whisk until smooth.

Heat your skillet with a small amount of butter coating it on medium to medium high (if you're learning, do medium, once you get better, do medium high). Once your skillet is hot, get your batter ready, next to your skillet. Put a plate near your skillet to take the pancakes after you are done cooking. THEY COOK VERY FAST!

Take a ladle and spoon about 1/4 cup of batter into the skillet, swirling the batter around as you're spooning. This needs to be done FAST and you'll get the hang of it soon. Try and get the batter to be as thin as possible on the skillet and swirl it around till it's started to cook.

WATCH IT CAREFULLY and when the very edge of the pancake starts to brown, take a butter knife and gently remove the very edge of the pancake from the pan. Once it's up far enough, use your fingers to peel it off and flip it over. Hopefully it's golden brown. After it's flipped, let it sit there for 30-45 seconds till the other side gets goldenish and pick it up and toss it onto the plate you have handy.

Then repeat until your batter is all gone!

Put jam, peanut butter, sugar, brown sugar, powdered sugar, syrup, or anything else you can think of on one end of the pancake, roll it up, and eat it. SO GOOD!
