Pineapple Chicken Stir Fry

Ingredients
4 boneless skinless chicken breasts (cut up)2 cups of raw broccoli chopped1 cup of raw carrots chopped1 341ml jar of VH pineapple cooking sauce1 tbsp of extra virgin olive oil2 cups of minute rice (white)
Directions
Cook minute rice according to directions on box.

Add olive oil to the wok. Once it's hot add the chicken. Once the chicken is no longer pink, add the veggies. I only used broccoli and carrots because that's what we had on hand but you could definitely add other things. Stir veggies and chicken for a few minutes until slightly tender. Add jar of pineapple cooking sauce and cook for another minute or two. Serve over rice.

Makes 6 very filling servings.
