Sweet Italian Chicken Sausage and Pasta soup

Ingredients
2 12 oz pkgs Sweet Italian Chicken Sausage12 oz carrots, peeled, chopped12 oz onion peeled and chopped4 cloves garlic3 qts fat-skimmed chicken broth2 can (15 oz) cannelloni (white) beans, rinsed and drained2 cans (14 1/2 oz) diced tomatos1 T. dried basil2 c. dried large shell-shaped pasta4 qts. (about 12 oz. spinach leaves, rinsedsalt and pepper
Directions
Slice sausages into small pieces and place into and 8 to 10 quart pan over high hear: stir often, until browned about 2-3 minutes. Spoon out.

Puree 1 can of beans in a food processor. Add carrots, onion and garlic to the chicken sausage: stir often until onion is limp, 5 to 7 minutes. Add brother, tomatoes (including juice), pureed beans and 1 can whole beans and basil.* Bring to a boil. Add pasta, reduce heat, cover and simmer, stirring occasionally, until pasta is just tender to bite, about 10 minutes. Skim and discard any fat. Stir in spinach and cook just until wilted, about 30 seconds. Add salt and pepper to taste. Top with parmesan cheese, if desired.
* Recipe calls for diced tomatoes and the 1 T basil. I use tomatoes with garlic basil and oregano.
