Carrot and Corriander Soup

Ingredients
1 onion- diced500g carrots sliced1 celery stick sliced1 medium potato diced1 ltr vegetable stocksalt and pepper to taste2 tbsp ground corriander powderhalf cup choppped corriander leaves1.5 tbsp single fresh cream1.5 tbsp butter2 tbsp oil
Directions
makes 6 servings approx. Melt 0.5 tbsp of butter with 1 tbsp oil in a large pan and once hot add diced onion and fry until onions are translucent. After 3-4 mins add the diced potato and diced celery and cook for 2 mins, then add sliced carrots and cook on low heat with lid on for 10 mins and allow to sweat. Add the vegetable stock about 1 ltr and bring to boil, then cover and simmer for 20-30 mins. In a frying pan heat the remaining butter and oil and once hot fry ground corriander powder for 1 min and then add this to the simmering pot. Once cooked add a little cream and salt and pepper to taste. Blend together until smooth and finish of with finely chopped fresh corriander.
