Shrimp Cocktail

2 - 8 oz boxes Neufchatel cheese (low fat cream cheese)1/4 c. cocktail sauce2- 4.24 oz cans Tiny Shrimp (Great Value)1/4 tsp garlic powder1/4 tsp onion powder1 green onion top - sliced (optional for decorating)1/8 tsp pimentos- (optional- for decorating)
1) Soften Cream cheese to room tempturature.(place in microwave for 15 seconds on 80% power.
2) Drain and rinse shrimp
3) Beat cheese, cocktail sauce, and spices until smooth.
4) Fold in 3/4 of the shrimp (about 1 and 1/2 cans)
5) Pour mixture into serving bowl. Pour remaining shrimp over top.
6) Decorate as desired- I used sliced green onion tops and a small spoonful (aprox. 1/8 tsp of pimentos).
7) Cover and refrigerate for 2 hours before serving.
This made a lot! So I'm guessing on the serving size of 2 - 3 T. each for 16 servings.
This is calculated for nutrition using 16 servings as that is what the cheese served.
Serve with Crackers or other dippers (celery sticks would be great with this)!
