Green Pea/Cauliflower salad

Ingredients
20 oz frozen green peas, thawed2 cups chopped cauliflower1 cup chopped celery2 Tbsp chopped green onion1/2 cup crumbled bacon or bacon bits1 cup chopped cashewsDressing:16 oz. lite ranch dressing1 cup lite sour cream1 tsp garlic1 tsp spicy mustard (I use grey poupon)
Directions
Combine salad ingredients, minus dressing. Combine dressing ingredients.
Add dressing to salad. Chill several hours.

    I have a question: 3 cups of dressing (16 oz. ranch + 8 oz. sour creme) to go over maybe 5 cups of veggies? This would be swimming in dressing and calories if that's right? - 7/1/11

    This recipe is so delishious... and flexible. Sometimes I leave bacon out and add 1/4 c of pimentos. Dressing is important part. Would not change that at all. - 1/4/10
