Seafood Soup

3 oz shrimp peeled and deveined2 large sea scallops quartered1.5 oz halibut cut into cubes1/2 cup fresh spinach1/2 cup snap peas1/4 small onion sliced thin1/4 cup chinese cabbage sliced thin1 medium scallion chopped3 cups fat free or low fat vegetable broth
drizzle a small amount of olive oil (or vegetable broth) in the bottom of a pot. Saute the oinions about 3 to 5 minutes. Add the broth, seafood, spinach and snap peas.
Simmer about 5 minutes or until the seafood is cooked.
Serve in a bowl and top with the shredded cabbage and scallions. Drizzle with low sodium soy sauce (optional)
