Turkey Sausage Ragu- Clean Eating

Ingredients
3 tbps EVOO, divided1 Medium Onion, diced small2 tbsp Italian Seasoning, divided8 oz Smoked Turkey Sausage (not breakfast sausage), cut into 1/8" slices1/4 tsp Red Pepper Flakes3 Cloves of Garlic1/2 Cup Chicken Broth1 14.5 oz Can of Diced Tomatoes in Juice2 cups Fresh Spinach1 tbsp Red Wine Vinegar8 oz Whole Wheat Pasta (I use spirals)
Directions
Bring water to boil in medium pot, but do not add pasta yet!

In a second medium pot, over medium heat, cook onion and 1 tbps italian seasoning in 1 tbps evoo until onion is soft, stirring occasionally. Add sliced sausage, garlic and red pepper flakes. Cook for 5 minutes. Take pot off the heat, swirl in chicken broth. Return to heat and cook 1 minute.

Add pasta to boiling water. Cook until al dente.

Meanwhile, add tomatoes, 1 tbsp italian seasoning and spinach to sauce. Stir well, cover and cook 5 minutes. Uncover and cook 10 minutes until slightly thickened. Stir in 2 tbsp evoo and vinegar.

Drain pasta and toss with sauce. Sprinkle with parmesan cheese if desired.
