Mashed Potatoes

Ingredients
2 Large Raw White Potatoes1/2 cup of Milk (or Soy Milk)1 tlbs of butter spread (or butter substitute)Onion Powder (1/2 tsp or to taste)Garlic Powder (1/2 tsp or to taste)Ground Black Pepper (1/2 tsp or to taste)Sea Salt (1/2 tsp or to taste)
Directions
Bring water to a boil in a medium saucepan. Peel the potatoes and cut into quarters (or 1 1/2" chunks).

Add the potatoes and boil until tender. Maybe 30 minutes. Drain the potatoes and return to pot.

Add 1 tlbs. of butter (or butter substitute to be healthier) and begin to mash potatoes. Slowly add the milk (you can substitute non-fat and/or soy).

Continue to mash until smooth. For thicker mashed potatoes add less fluid, for thinner add more fluid.

I eat these in 1/4 cup portions. Makes about 8 servings.
