Oven Roasted Chicken with White Beans & Tomatoes

2 cans 15.5 ounce cannelini beans, rinsed1 pint grape tomatoes1 tsp dried thyme1 tsp dried oregano2 garlic cloves, minced2 T olive oil1/2 tsp black pepper8 chicken thighs, skin removed1/3 C white cooking wine (optional)
1. Preheat oven to 425 F.
2. In a 9x13 baking dish, toss beans, grape tomatoes, garlic, ONE tablespoon of the oil, thyme, oregano, and 1/4 tsp of the black pepper, and white wine.
3. Rinse & pat dry the chicken, then nestle the thighs among the bean mixture, bones down. Rub tops with remaining oil & black pepper.
4. Roast until chicken is golden and cooked through: 35-45 minutes.
5. Each serving is 1 thigh and about 3/4 C bean mixture. Makes 8 modest servings.
