*Potato, raw, 3 large (3" to 4-1/4" dia.) Garlic powder, 1 tbsp *Turkey, Ground turkey, 93% lean, 16 oz Carrots, raw, 1 cup, chopped Onions, raw, 1 cup, choppedCilantro, dried, 2 tbspPepper, black, 1 tbspSalt, 1.5 tsp Cheddar or Colby Cheese, Low Fat, 1.5 cup, shreddedGrapeseed Oil, 2 tbsp Egg substitute, liquid (Egg Beaters), .5 cup*2 percent milk 1 cup, .3 servingWater, tap, .7 cup (8 fl oz) Pepper, red or cayenne, 1.5 tbsp
spray pan with 1/2 of the grapeseed oil and brown turkey with onions, carrots, garlic powder, red pepper flakes and black pepper in skillet.
slice potato thin (use a mandolin if possible)
spray 9x9 casserole dish with remaining 1/2 of the grapeseed oil
put down a layer of potatos, overlapping ends, to cover bottom of dish
put turkey/vegtable mix on top of potato layer
put down another layer of potatos over turkey/vegtable mix
mix egg beaters, milk, water and cilantro
pour mixture over casserole
cover with foil
bake covered for 20 minutes on 350 degrees
uncover then add cheese
bake another 20 minutes uncovered
makes 6 servings
