Fajitas Chilaquiles Casserole

8 whole wheat tortillas- cut into stripsVegetable Spray1 tbs. onion powder 1 tbs. garlic powder1 tbs. Cumin1 tsp. cinnamon1 tbs. chili powder1 tsp. oregano1 lb. steak or chicken- cut into strips4 tbs. olive oil2 bell peppers- cut into strips2 red onions- cut into strips3-4 garlic cloves- chopped1/4 cup cilantro2 limes 2 cups- shredded cheddar cheese
1. Preheat oven to 400 degrees. Place tortilla strips on cookies sheet, spray with veg. spray. Cook 7-8 mins. or until cripsy.
2. Combine spices in a bowl.
3. Season meat with salt and pepper, toss with rub until well seasoned.
4. Heat olive oil in skillet, cook meat.
5. Heat olive oil in separate skillet, cook peppers, onion and garlic until softenend. Add juice of one lime, salt and pepper and toss.
6. Combine tortilla strips, meat and veggies in casserole dish. Cover with cheese and cook until cheese is melted.
