White Bean Dip

Ingredients
4 Tbsp. lite olive oil1 tsp. black pepper2 cans cannellini, navy or great northern beans 2 tsp. vinegar, red wine vinegar or red wine½ tsp. dried oregano2 cloves crushed garlic¾ tsp. salt2 Tbsp. red onion, finely chopped¼ c black olives1 roasted red pepper, chopped1 Tbsp. fresh parsley1 pkg. pita bread or bag of pita chips
Directions
Puree all ingredients in blender. Pour into bowl. If using pita bread, quarter then halve. Brush with olive oil. Broil until lightly browned, watching carefully, they cook quickly and get hard as a rock if overcooked! Serve warm with dip.
