Pico De Gallo Chicken Salad

Ingredients
2 Chicken Breast or 4 Thighs if you prefer dark meat 2 tbsp Olive Oil1 large Iceberg LettuceFor Pico De Gallo2 cups chopped Tomato3/4 cup chopped Onion1/4 cup finely chopped CilantroJuice of 1 Lemon1 Chili Pepper1 Avocado (chopped in small cubes)Salt (season to taste)
Directions
Season boneless chicken breast or thighs with some poultry seasoning ( I like using chicken rub and a bit of garlic salt). Place in skillet with the olive oil. Once they are cooked through, cut into bitesize cubes and set aside.

Chop tomato, onion, avocado
Add finely chopped cilantro and chili pepper
Mix together and squeeze lemon juice into mixture.
Add salt to season

Cut up lettuce and rinse well

Place lettuce on plate and top with chicken and pico de gallo.

Enjoy! Makes about 4 servings.
