Parmesan Chicken

1 boneless, skinless, chicken breast1tsp. of dijon mustard2 tbs grated parmesan cheesecooking spray
Brush the chicken with the dijon mustard evenly on both sides. Pat cheese onto chicken to make a crust. Place on a baking sheet and spray lightly with the cooking spray ( this will help make it golden brown and crusty). Bake at 375 for 20 to 30 min... depending on your oven and the size of you chicken breast. Makes 1 serving.

Thanks for the great idea, and for having the proportion in a single size. Most of the meals I do are just for my husband and I and with this one I didn't have to re-calculate any quantities. It tastes great too. I placed my chicken on a rack over the baking sheet and it crisped all around. Yum! - 9/21/10
