Quinoa Tabbouleh

Ingredients
2 cups water1 cup quinoa1/4 cup olive oil1/4 cup lemon juice3 tomatoes, diced1 cucumber, diced2 bunches green onions, diced2 carrots, grated1 cup fresh parsley, chopped
Directions
Cook quinoa
combine all other ingredients in separate bowl.
once quinoa is cooked, allow to cool then stir in to mixture
cover and chill overnight or for 4 hours miimum
