Dairy-Free Plain Muffin Base (Joy of Cooking)

Ingredients
1 1/4 cups spelt flour3/4 cup oat flour1 tbsp baking powder1/2 tsp salt1/4 tsp grated or ground nutmeg (optional)2 large eggs1 cup rice milk2/3 cup packed brown sugar1/4 cup extra light tasting olive oil1 tsp vanilla extract
Directions
Preheat the oven to 400 degrees.

In a large bowl, mix together the flours, baking powder, salt and nutmeg. Set aside. In another bowl combine the remaining ingredients. Add to the dry ingredients with a few swift strokes- do not over mix. Divide the batter among the muffin cups.

Bake until a toothpick inserted into 2 or 3 of the muffins comes out clean, about 17 minutes.

Makes 12 Muffins.
