Savory Crustless Custards

Ingredients
3 eggs1/2 cup half and half1/2 cup yogart, plain1 tablespoon butter, unsalted4 tablespoons flour4-oz cheddar cheese
Directions
Preheat oven to 425 degrees. Sray six 4-oz ramekins liberally with nonstick spray. Whisk together eggs, half and half, yogurt, and melted butter util well combined. Add the flour and salt. Stir until there are no lumps. Stir in the cheese, parsley and chives. Transfer the mixture to a pitcher (this makes it easier to pour). Fill each ramekin 3/4 full, place them on a baking sheet and bake for 30-35 minutes, or until set, puffy, and lightly browned on top. Remove ramkins to a cooling rack and cool for at least 10 minutes before unmolding. Serve custards warm or at room temperature with a Market Salad of your choice. Makes 6 servings.
