White Bean & Smoked Sausage Soup

Ingredients
1 lb dried navy beans (or white lima beans)1 lb Healthy Choice Low Fat Smoked Sausage - diced2 cups chopped onions (white or yellow)2 bay leaves1 garlic clove8 teaspooons chicken stock bouillon granules (or 4-6 cubes)1 tbsp canola oil2 tsp salt1 tbsp freshly ground black pepper1/2 tsp cayenne pepper
Directions
Soak beans in cold water overnight. Drain & rinse well. (For a faster method, boil beans for 2 minutes, take off heat, then leave in water for 2 hours).

In a large pot, heat oil to over med-hi heat. Add sausage and saute for 5 minutes or until browned. Remove sausage and save for later. Cook onions 3-4 minutes. Add garlic, cook for another minute.

Add sausage back into the pot. Add the beans, bay leaves, water, boullion cubes, salt, pepper, and cayenne. Bring to a boil, reduce heat to a simmer. Cook partially covered for 2 1/2 to 3 hours, stirring occasionally.

Taste, adjust seasoning with salt and pepper. Mash some beans against the pot to make the soup a little thicker.

Serve with hot crusty bread.

A time-saving option would be to use 2 cans of navy or Great Northern beans

    Very tasty, would definitely make this recipe again. If using canned beans, would recommend using at least 4 to 5 cans of beans. I would not be able to serve 8 with only 2 cans of beans in the soup. Otherwise, a wonderful soup for a chilly day, and easy to prepare. - 9/8/08

    This was good tasting soup. I also used smoked turkey sausage. Didn't have any chicken boullion, so I used a can of chicken broth instead. It was awfully hot... maybe the "tbsp" of pepper was supposed to be "tsp"? - 1/18/09
