Baked "fried" tilapia

Ingredients
40 saltine crackers, crushed (in food processor)1 egg, beaten1/4 eggbeaters1/4 tsp salt1/8 tsp cayenne pepper1/8 tsp garlic powderpinch pepper1 1/2 lb tilapia, thawed if frozen, cut crosswise in 1" strips
Directions
makes 48 fish strips

Preheat oven to 375*
combine spices with crushed crackers; beat egg with egg beaters. Dredge fish pieces in egg mixture, then in cracker mixture; Place on greased (with Pam) baking sheet. Bake at 375 for 10-15 minutes or until firm to touch.
