SevenAcreSky Crunchy Cashew Chicken Salad

1 large can (10 oz) canned premium white chicken1 large stalk fresh celery1/2 cup cashews, chopped medium2 tbsp sweet pickle relish3 tbsp light mayonaise1/2 tsp paprika1/2 tsp black pepper
Makes 4 hearty (3/4 cup) servings for sandwiches or to top a quartered tomato.
Chop cashews into medium pieces.
Slice celery stalk thinly.
Roll lettuce leaves together and slice crossways to form narrow strands (1/8 to 1/4 inch wide)
Drain can of chicken, place chicken in bowl and crumble chunks with fork.
Add cashews, celery, and lettuce strands.
Add pickle relish and mayonaisse.
Add paprika and black pepper, more if desired.
Stir to mix ingredients.
Serve on wheat bread or buns, topping with tomato slice if desired. Or quarter a tomato and spoon a serving into the middle of the quartered tomato.
