Jalapeno Corn Chowder

1/4 cup chopped onion1 clove of garlic1 tablespoon butter or margarine1 tablespoon all-purpose flour1 cup diced peeled medium potato1 cup water1 cube chicken bouillon1 cup fresh or frozen corn1 finely chopped jalapeno1 tablespoon chopped cilantro2 cups milk1/8 teaspoon pepper1 dash paprika2 strips of cooked bacon, chopped
1. In a medium saucepan, saute onion and garlic in butter until tender.
2. Stir in flour. Add the potato, water and bouillon; bring to a boil. Reduce heat; cover and simmer for 7-10 minutes or until potato is tender.
3.Add corn, jalapeno, cilantro, milk and seasonings. Cover and simmer for 15 minutes.
4. Serve and garnish with bacon and a small sprig of cilantro.
