June's Tasty Quiche

Pastry crust 2 cups of flour3/4 shortening6 tbsp of ice water(makes enough pastry for 2)Filling8 eggs4 strips of turkey bacon1 medium tomato (diced)1 cup of whole mushrooms (diced)Half of a medium Red Pepper1 cup of shredded cheese (save half for top)
Makes 4-6 Servings
Mix together shortening and flour until crumbley
Slowly add water (make sure it's ice cold)
mix until it's a smooth ball.
Roll out pastry for a 8inch pie plate
Mix all filling ingredients together and pour on top of the crust.
Sprinkle shredded cheese on top
Cook until eggs puff up like a round dome.
Check to see if egg is raw in center using a knife or fork... if it's not then it's done. Let cool for 5 minutes and serve.
