Low-Cal / Lower Sodium Chicken Fried Rice

Ingredients
Cooking Spray1/2 Cup Shredded Carrots5 Scallions, chopped (3 scallions will go in to saute, 2 scallions will go in later)2 frozen chicken tenders, thawed & chopped into very small pieces1 egg2 cups Trader Joe's Organic Brown Rice (frozen) (just use 1 of the packages in the box)1/2 cup frozen peas, thawed1/4 cup low-sodium soy sauce2 Tbs teryaki sauce
Directions
Shred carrots, chop scallions, and cut up chicken.
Get peas out of freezer to thaw.

In a large skillet sprayed with nonstick cooking spray, saute chicken, carrots & scallion together until chicken is cooked. Remove from skillet and set aside.
Crack egg into skillet and gently "scramble".
Add chicken mixture back into skillet.
Add rice, remaining 2 scallions, peas, soy sauce and teryaki sauce. Stir while cooking for 2 minutes.
