# banana, fresh, 3 medium (7" to 7-7/8" long) # Butter, salted, .5 cup, melted # Honey, 1 cup # *Egg, large whole raw, per egg (46 g), 3 serving # Vanilla Extract, 1 tbsp # Yogurt, fruit, 1 container (6 oz) # Baking Powder, 3 tsp # Salt, .5 tsp # *King Arthur Flour Unbleached All-Purpose Flour, 3 cup (remove)# *Dried Fruit - BJ's Gourmet Mixed Fruit, 2 cup, chopped # Pecans, 2 cup, chopped # *Beverage - Tea - Bengal Spice - Celestial Seasonings - Hopsack, 3 serving
Preheat oven to 350. Grease and flour a bunt pan. Brew tea and pour over fruit, set aside. Mash the bananas in a large bowl; if possible aerate with an immersion mixer. Try to get them as lump-free as you can. Add eggs and beat until frothy. Add the melted butter and honey. Beat well. Add the vanilla and yogurt. Continue beating until the mixture is relatively smooth. Sprinkle in the baking powder, salt and flour. Stir with large spoon until everything is evenly combined. Turn the batter into oiled and floured bunt cake pan. Bake at 350° for about 60 minutes. Remove from the oven when a toothpick inserted at thickest part comes out clean. Allow to cool before cutting.
