Kickin' Collard Greens

1 medium Red Onion, chopped (100 g)4 ounces Farmer John Classic Smoked Sausage, chopped1 teaspoon Mrs. Dash Southwestern Chipotle Seasoning Blend1/4 teaspoon crushed red pepper2 cups water, divided2 bunches Collard Greens, destemmed and sliced into 1" strips (400g)
Light spray heavy dutch oven with cooking spray
Over medium high heat brown meat and soften onion
Add seasoning and cook about 1 minute
Deglaze pan with 1 cup of water.
Dump greens over mixture, cover with a heavy lid and cook over low heat 10 minutes to soften.
Stir mixture to coat greens evenly.
Cover and cook 30 minutes over low heat.
If needed, add remaining 1 cup of water to keep moist and cook an additional 20 minutes.
Remove from heat and let rest 10 minutes before removing lid. Serve!
